Because the Mango Power E requires a minimum input voltage of 60V, you must connect a minimum of two 400W panels in series. You can build out massive off-grid arrays by connecting 2, 4, or 6 panels using a combination of series and parallel cables (parallel cables are included with the Mango Power E accessories list).
